Who doesn’t love pancakes? They’re sweet, they’re fluffy, and they’re stacked on top of another so you can never just eat one. The Mile High City has got some great pancake spots here, and we’re going to be listing some of the best. Lemon Ricotta, Savory and Sweet, and globally-inspired stacks of pancakes are coming your way, so we hope you’re hungry.
1. Vital Root
Edible Beats is committed to globally-inspired cuisine, and their Vital Root restaurant on Tennyson is offering up an Asia take on the classic pancake. Their Sweet Potato Ube Pancake pays homage to the purple yam of the Philippines known as Ube, as well as the orange-colored traditional sweet potato, making this dish perfect for a sweet start to your day. Ingredients include blue cornmeal, pepitas, popcorn, and burnt maple whip.

2. HashTAG
HashTAG restaurant has got a whole lot of tasty and delicious pancake recipes up their sleeve, and a whole segment of the menu dedicated to them. Their mini hotcake trio, pictured above, includes three flavors of pancakes: chocolate and sea salt, caramel apple, and classic blueberry. But they’ve also got their flavored pancakes full-size as well, topped with powdered sugar, whipped cream, and a delicious dousing of maple syrup.

3. Jelly U Cafe
Jelly claims to be the best breakfast on Capitol Hill in Denver, so let’s take a look at the flavored flapjacks they’ve got on the menu. First off, they’ve got some classically flavored buttermilk pancakes, but they’re also doing some fun stuff with their hotcakes as well. Get a tall stack of Lavender Blueberry pancakes with blueberries baked into the cakes, then topped with homemade lavender berry preserves. Or try their cinnamon pancakes with a sweet frosting glaze. Maybe you like something savory? Get a stack of bacon pancakes, and don’t forget the syrup.

4. Root Down
Edible Beat’s Root Down location is also doing fun stuff with their flavored pancakes. Their brunch menu includes an Almond pancake that comes with ingredients perfect for the upcoming spring time. Fresh strawberry, basil, and mint followed by Huckleberry Devonshire Cream and Biscotti Crumble.

5. The Universal
The Universal Denver is a popular breakfast spot in Denver with three different flavors, classics but delicious. The buttermilk pancakes topped with butter and syrup which you can then add delicious blueberries to them. Better yet, add bananas and walnut for a sweet and fresh variation.

6. Wendell’s
Wendell’s claim to fame is their pancakes, evident in the title: Denver’s Best Pancakes™. A fluffy stack of hotcakes flavored with hints of lemon zest and vanilla in a few different flavors like Maple, Berries and Cream, and Cinnamon Apple Caramel. Even if the flavors are relatively simple, Wendell’s does them with an expertise that is only enhanced by the addition of decadent syrup and soft butter.

7. Bacon Social House
Bacon Social House has got a whole menu dedicated to pancakes at their Littleton location. From their pancake of the month, a fall-flavored Pumpkin Cheesecake Pancakes to the flavors that are always for sale like their Sweet Red Velvet pancakes with cream cheese frosting or their Sunshine Pancakes, flavored with lemon ricotta poppyseed pancakes with berries. They’ve also got a Chocolate Chip Bacon Pancakes with chocolate chips, bacon bits, and candies pecans.

8.Sassafras
Sassafras is a Cajun-style restaurant that’s also serving up breakfast in Capitol Hill. While they do have Southern classics like beignets, you’re here for the pancakes. Try a short stack of delicious hotcakes topped with butter and pure maple syrup, then add your choice of toasted pecans, butter, or chocolate chips. Or try their speciality Pigs in a Blanket pancakes that come with maple syrup and smoky sausage.

9. Syrup Restaurant
What goes well with syrup? Pancakes, and lots of them. Syrup is doing pancakes stuffed with different types of ingredients and flavors to go along with their handmade syrups and butters. Try a stack of their buckwheat and granola-stuffed pancakes called the Up & At ‘Em with their maple vanilla syrup or their Sweet & Savory pancakes drizzled with Kahlua syrup and topped with whipped honey cinnamon butter. There are so many possibilities so eat up.

10. Snooze Eatery
Snooze Eatery is celebrating pancake day in a big, big way. They’ve got 11 new pancake flavors–exclusive for pancake day–and for each person who dines with them, they will be donating sales to The No Kids Go Hungry organization, with a minimum donation starting at $20,000. Some of their exclusive pancake flavors will be a Mexican-flavored short stack with a spicy chocolate sauce, cinnamon, and peanut butter, a bourbon and cherry pancake, a Monte Cristo-style with ham and cheese, and a spicy sausage and poblano Chile pancake. Eat until you’re stuffed and do it for a great cause.
