Bon Appétit recently announced their list for Top 50 Best New Restaurants in America (which will be in their upcoming October print issue) and good news, Denver’s first pozolería that opened summer 2021, La Diabla Pozole Y Mezcal, made it!
Chef Jose Avile has been making a huge wave in Denver with all of his culinary ventures, from Borrego Negro to X’Tabai Yucateco, and for great reason. All of his restaurants call back to hispanic heritage cuisine, unique and traditional styles of cooking, and imported, fresh ingredients.
Bon Appétit spoke highly of the use of Mexican-imported corn to make fresh tortillas as well as the restaurant’s staple, pozole, which comes in 4 distinct flavors and a vegan option. Each bowl of pozole is served with their excellent corn tortillas and topped with lettuce, radish, cabbage, onions, and lime, and you can add avocado, a poached egg, or chicharron for $3 more. For the flavors, the soup comes in verde, rojo, blanco, and negro, all with their own flavors and spices. If you want it with meat, you can get cabeza de cerdo or pollo, both juicy and delicious.
Don’t leave without trying one of their specialty cocktails, like the Alcalpulque Vice, a frozen piña colada with coconut, passion fruit, pineapple, and hibiscus. Plus, if you’re a fan of the second namesake ingredient of La Diabla Pozole y Mezlca, don’t forget to scan over their extensive mezcal list for a spicy kick to compliment your pozole.
