Welcome to Ghost Donkey the newest Mexican gourmet cantina and cocktail bar where the nights are long and the mezcal is smoky. Located inside Union Station, Ghost Donkey is a hip new spot for fans of mezcal and tequila alike, and those who may have never tried them before.
This bar focuses on Mexican food and liquors, and we are in love with this new restaurant’s hip and colorful branding, photography, and interior. Are you as excited as we are for this space? Neon lights illuminate this dark bar where you can sit back and enjoy the wonderful Mexican cuisine. From cerveza to vino to delicious cócteles, which are the star of the show.
One of their most interesting cocktails they offer is their Mole Negroni, with Koch Espadin Mezcal which has sweet, fruity, and coconut notes, cynar which is an Italian bitter apertif, cocchi torino vermouth, rababaro zucco vermouth, mole spices, and bitters. While it may sound intimidating, this one is likely to be smoky, liquorish sweet, citrusy, and chocolate-y. Yum. For something a little lighter, we’d recommend their Altos Paloma, which has Altos Plata Tequila, lime, grapefruit soda, and citrus salt.
Their appetizers include classic Guacamole + Chips plus salmon ceviche. They also have a range of nachos from chorizo nachos, truffle nachos, wild mushroom nachos, mole chicken nachos, and steak and black bean nachos.
They’ve just had their grand opening on May 27th, just in time for Denver’s vaccine rollout and relaxed capacity. From Sunday to Wednesday, they’ll be open from 3:30pm to midnight and Thursday through Saturday, 3:30pm to 1:30am. We’ll see you there.
