The pop up has been one of the greatest trends in the last couple of years, and we couldn’t be more stoked to see that Denver’s coziest bars have begun their transformations. December is already a week in, but don’t worry, because there are still 3 full weeks of holiday fun as well as a week or two into January. There are quite a few locations in Denver that have completely transformed for the season, so here, we’ve highlighted 6 of our favorites with Sippin’ Santa-style tiki drinks, dazzling strewn lights and garland, and even visits from Santa himself.
1. The Viewhouse
The Viewhouse in Denver has been busy setting up their Christmas pop up, complete with white-frosted trees with presents, festive and furry garland, and stockings strewn about. They’ll even be offering a very special surprise–the Christmas passport–where you can get a $50 gift card to Viewhouse or My Neighbor Felix with the Christmas Passport. All you have to do is visit their holiday pop ups 4 times, order a drink, and get a stamp in order to get the tab.
2. NaughtyList Denver
Another of Denver’s best holiday pop ups, the Naughty List is a one-stop shop for a wild night out. The venue has been completely transformed and set up for the craziest holiday pop up in the city. Themed cocktails, visits from the Grinch, and the promise of a jolly good time. They’re open from 4pm to Midnight on weekdays, and 4pm to 2am on weekends.

3. Snowdrift at Adrift Bar
Adrift, one of Denver’s best tiki bars, has changed up their look for the holiday season and transformed into a winter wonderland. From an icicle-kissed bar to themed drinks and food. Every Thursday will have a different theme like their Ugly Sweater Party. On Wednesdays, you can enjoy spooky holiday movies and when you get hungry, enjoy Loco Moco Meatloaf with cranberry and wash it down with a Cranberry Thyme cocktail. This holiday pop up will be happening until December 31st.
4. Blazing Brights
Located at Fireside Grill at the Hilton Denver Inverness, Blazing Brights, which requires reservations in order to enjoy. Once you head to their website and make your reservation (until December 31st), enjoy festive sleigh shots and the Bah Humbug Hot Cocoa bar amidst twinkling lights, colorful ornaments, and Christmas music.
5. My Neighbor Felix
My Neighbor Felix is a Pan-Mexican bar and kitchen inspired by all seven regions of Mexico that’s also doing amazing themed pop ups from Halloween to Christmas. Their different cocktails range from spicy to sweet to spirit heavy and all have an amazingly fun holiday-theme to them. From their Winter Coconut Cosmo to their Mistletoe Margarita and their Coco Caliente, you’ll have a hard time not trying them all. Since they’re going to be open until the end of December, you still have a lot of time to enjoy. Head to their website to make a reservation for their LoHi location here.
6. The Mansion on Colfax
If you’re looking for a wild Christmas pop up, head to the Mansion on Colfax for their unique holiday experience called Get Lit, a Party Christmas with dazzling light displays, photo opps, and non-traditional Christmas decor in an old 1800’s mansion.
