A new restaurant has been spotted here in Central Market. The first of its kind, Lunchboxx is a concept kitchen that brings together childhood nostalgia with healthy meals.
The mind behind this new concept is Zach Spott, who is also the guy behind the wonderful Green Seed Market and the Denver Central Market. The inspiration behind Lunchboxx, which opened on July 21st, was simple: “[It] came from the idea that in this new era of casual cuisine, lunch and dinner are rather interchangeable. We want to offer the neighborhood an eclectic set of fresh, curated foods where options are plentiful for a variety of occasions.”
The boxes will be globally inspired, from Japanese Bento Box style to Mediterranean or American Grill boxes. Some of the items they’ve served at their recent pop ups had been yummy Hawaiian Macaroni Salads, Spicy Queso, and Baba Ganoush.
Their menu, shown on their Instagram, not only offers a variety of deliciously crafted sides to go alongside your mains, but wonderful entree plates like sandwiches, like their Shroom Sandwich stacked with tempura oyster mushrooms, spicy slaw, and miso ginger aioli.
Their opening hours are from 8am to 8pm. See you there!
