ChoLon Restaurant Concepts, meaning “big market” and referencing the biggest Chinese-influenced market in Vietnam, is bringing a new concept to their already established repertoire. Yumcha Dumpling and Noodle Bar will be opening next month in LoDo. Originally slated to open Summer 2021, the wait is finally over this fall season, and we couldn’t be more excited to see what Yumacha will cook up.
The chef behind these restaurants, Chef Lon Symensma, was inspired by his time living in Southeast Asia, and after working at the highly acclaimed Buddakan in New York City, where he receive two gold stars from the New York Times. He apprenticed in countries renowned for their food like Italy and Spain at Michelin-starred restaurants and even world-renowned, Arzak in San Sebastian, Spain.
In the last nine years, he’s brought his passion and expertise to Denver, opening the popular ChoLon Modern Asia restaurant as well as LaRoux, a modern European restaurant. The newest concept coming from Chef Symensma is Yumcha Dumpling and Noodle Bar, which we guess will be one of the most anticipated openings of the fall 2021 season.
